White chocolate contains no cocoa solids at all.
It is made from cocoa butter, sugar and milk. The brown cocoa solids that give dark and milk chocolate their flavour and colour are left out entirely.
Why is this true?
Cocoa butter is the fat pressed out of cocoa beans, so white chocolate still comes from the cacao tree. Many countries require a minimum of 20 percent cocoa butter before it may be called chocolate at all.
